The Storage of Our Sweet Potatoes

In storage, the sweet potatoes are heat cured in our modern computer controlled curing rooms, and then stored long term at 58 degrees and 85% humidity. Curing is a very complicated but important part of sweet potato storage. Curing is basically manipulating or tricking the sweet potato to start the process of converting the starches it has stored into sugars. In doing so, the skin of the sweet potato becomes tougher which allows us to wash, inspect and size it without damage. Our sweet potatoes are held in these storages until the order arrives. At that time they are pulled from storage and packed to the customer’s specifications. With these technologically advanced storages, we are able to provide a consistent and exceptional quality sweet potato 12 months per year.
